  • 2 chicken breast fillets, skinless and boneless
  • ½ cup chopped bell pepper, mixed (green, red, yellow)
  • 2 tablespoons of onion, chopped
  • 1 teaspoon of cayenne pepper
  • 4 slices of Provolone cheese
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste

How to make stuffed chicken breasts without cream cheese

Preheat the oven to 375F, then grease a 9×13-inch baking pan. Also, grab your ingredients, and let’s start!

Heat the olive oil In a medium skillet while you chop the bell peppers and onions. 

Then add the chopped peppers and onions into the skillet and cook for 5 minutes while you stir.

Grab your chicken breasts and pat dry to remove any excess water. Then make a slit in each chicken breast, horizontally.

Fill the chicken with one slice of cheese, the cooked bell peppers and onion mix, and the second piece of cheese.

Press the chicken ends to seal. You might even need to secure the pockets with a toothpick if necessary.

Place the stuffed breast into a greased baking dish and bake for 20 minutes, flipping halfway through so the chicken browns evenly on each side.

The cheese may melt out a bit but nothing to worry about.
