Ingredients

  • 2 cups baby spinach
  • 1 tablespoon mint leaves, chopped, optional
  • ¼ cup sliced strawberries
  • ½ cup chopped grilled chicken
  • ½ tablespoon crumbled feta cheese
  • 1 avocado – peeled, pitted, and sliced
  • ¼ cup almonds

How to Make Chicken Spinach Salad Without Bacon

Start with your chicken. Grab a skinless chicken breast, and pat it dry with a paper towel. Then brush the chicken with olive oil and sprinkle with Italian herb seasoning and some salt to taste. Cook the chicken in a skillet, or on a grill for 4 minutes per side. 

Chop the chicken into cubes and set this aside until the other ingredients are ready.

Gather the rest of the ingredients in one place and chop up the strawberries.

In a large bowl, combine the baby spinach, mint leaves, strawberries, almonds, avocado, and the cubed chicken.

Tips and tricks

Toast the almonds – If you want a more complex flavor for this salad, toast the almond in a hot skillet. Toasting the almonds will make them wonderfully fragrant inside the salad. To toast them, place them in a single layer in a skillet and heat over medium heat for 3 to 4 minutes until they’re golden and fragrant. Making sure you’re stirring often so the almonds don’t get a chance to burn. 

Fresh veggies are a must – Only fresh spinach will work for this recipe. I don’t think it bears mentioning, but no frozen spinach. Also, do not cook the spinach leaves. Fresh spinach leaves are packed with nutrients and are a great addition to salads.

Leftover chicken works too – I used freshly cooked chicken breasts, but you can use rotisserie chicken or any leftover chicken you have available in your fridge. 

Switch up the seasonings – I used Italian herb seasoning and salt to season the chicken breasts. But you do no to. You can use other seasonings of your choice to infuse the flavor that you like most. 

Add other types of fruit –  I used strawberries and avocado. But, you can switch it up and use mandarin oranges, blueberries, green grapes, or apples if you prefer.

Can you store chicken spinach salad?

This salad does not store well once it’s been made. Once you’ve drizzled the salad with the salad dressing, it needs to be eaten immediately or within the hour otherwise the greens will wilt and the almond will soften. This makes for a soggy salad that you do not want.
