Because I used the traditional baking soda in this simple banana bread without baking powder, the results were a light and airy banana bread loaf that everyone loved!

So, if you’re like me and you enjoy making banana bread with your leftover ripe bananas, let me show you how to make the best, and the simplest banana bread recipe with baking powder ever!

Ingredients

  • 2 medium bananas
  • 1 cup brown sugar
  • 2 eggs
  • ½ cup sourdough starter
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3 tablespoons of softened coconut oil
  • 3 tablespoons of milk

Start by gathering all the ingredients in one place. Then preheat oven to 375F.

Next, mash the bananas with a fork in a large bowl. Then add the sugar and stir to combine.

Once combined, add the eggs and whisk until smooth. Then add the sourdough starter.

Fold in the flour and baking soda and stir until just combined.

Add the milk and coconut oil, then stir until you have a smooth batter.

Transfer the mixture to a 9-inch loaf pan and bake the banana bread made without baking powder for 40 minutes.

Other tips and substitutes for making this bread

I use coconut oil, but you can use equal parts butter instead. Either of these is required to form a crisper crust making the shelf life of this bread longer. Do not skip.

I used brown sugar in this recipe, but you can replace this with coconut sugar if you absolutely do not have brown. Do not use white sugar though. The combination of brown sugar and over-ripe bananas gives this bread the most delicious caramelized flavor.

Also, if you don’t want to use milk, you can replace it with some oat milk or almond milk.

These simple swaps won’t change the flavor of the bread too much, but they’ll allow you to still try the recipe even though you don’t have every ingredient listed above.
